I'm Maria (aka The Magical Baker). I'm so excited you've found this website!
I went gluten free over ten years ago, when I discovered that gluten/wheat was triggering migraines. I had grown up experiencing headaches daily, and migraines weekly, and it was miserable. My parents took me to a number of doctors and specialists, and no one was able to get rid of the problem.

Fast forward to my early adult years - my mom read the book Wheat Belly, and stopped eating wheat. I was still living at home with her and cooked for both of us, so I stopped eating wheat in solidarity.

Within a week, I noticed my headaches had gone away, and I hadn't had a migraine since the change in diet. Could it have been wheat/gluten causing the issue all along? I wasn't sure.

Then I went out to dinner with other family members and I ate some bread at the restaurant. Within 30 minutes, I was slammed with a migraine. After a few more similar instances, I reached the conclusion that wheat was triggering an inflammatory reaction that was giving me migraines.
The early gluten free years were challenging. There were so few gluten free products on the market, and so few restaurants that noted what items on their menu were gluten free or not.
A lot has changed and improved since then, but I've still been frustrated with the lack of high quality, local gluten free options - and so I started making my own. I'm not content with baked goods that are "not bad for being gluten free" - I strive to make food so delicious, you wouldn't guess it was gluten free! Once I realized this dream was actually achievable, I decided it needed to be shared with the community.
While I hope to eventually have a storefront/commercial bakery, for now I am working on perfecting products at home, building a diverse menu of options, and getting my brand out there.
